rusting In fish processing, yellowish or brownish discolouration often around the vent and belly and on cut surfaces causing a rancid flavour. Caused mainly by a reaction between fat oxidation products and nitrogenous substances when inadequately stored.  
腐敗 在處理魚的過程中,若有不適當地儲存時,經常在排洩孔周圍、腹面和切除表皮處會有淡黃色或褐色的變色情形,且會造成一種腐臭的味道,其主要是藉由脂肪氧化後的產物與含氮物質之間的反應所引起。
