roe-off When abalone or scallops are shelled, the `gut' (including the roe) is removed from the meat (the white muscle block which joins the shells). Usually these shellfish are marketed with the red or orange roe (gonad) still attached; however, in some markets or for some species, meat without the roe is preferred (e.g., doughboy scallops).
